Spicy Cornbread Muffins |
Ingredients
- 2 (8 1/2-ounce) boxes corn muffin mix
- 1 cup milk
- 2 eggs, beaten
- 1 (8 3/4-ounce) can corn kernels, drained
- 1 canned chipotle pepper in adobo sauce, minced
- 1/2 cup grated Monterey jack
Instructions
- Preheat oven to 375 degrees F.
- In a large bowl, mix together all of the ingredients. Make sure not to over mix
- Spray muffin tins with cooking spray
- Divide the batter evenly in muffin tins
- Bake about 20 minute or until just golden and muffin springs back when gently pressed
- Let cool for 10 minutes, then serve
